Easy Vegan/Paleo Pumpkin Ice Cream!

Happy Tuesday! The weather is really cooling down lately, but of course, that hasn't stopped me from wanting ice cream.... I don't think anything would stop me from wanting ice cream.. This incredibly magical time of year calls for pumpkin everything! Why yes, I am addicted to fall and am one of those pumpkin spice everything girls. I have no shame!

I actually created this recipe last year but didn't get around to sharing it. The kids love to help me make this and it is super easy AND healthy. You'd never guess that this ice cream is actually good for you. If you want to keep your ice cream scoopable, be sure to add the xanthan gum as recommended. You will still be able to enjoy this without it, but it will be easier to consume straight away.

Find the video below on how to make this.. you can see just how simple it is! :)

Please let me know how this goes and post a photo of you and your family enjoying this recipe for a FREE copy of my Grain-Free Holicay Cooking eBook!
