Grain-Free Lemon Ricotta Pancakes

Pancakes... The best way to start the day. This is one of my all-time favorite pancake recipes.. They are DELICIOUS and super easy to make thanks to Birch Benders pancake mix. They are very hearty pancakes so just beware, they are very filling! Feel free to whip up some bacon for the side.. because you can never have enough bacon.

Birch Bender's is absolutely incredible. They are super easy to whip up. They are simply just ad WATER! I cook these for the kids all of the time. Sometimes I add chocolate chips, blueberries, etc. I was feeling adventurous and decided to make lemon-ricotta. The kids still loved them. 






Grain-Free Lemon-Ricotta Pancakes
(primal, grain-free)
Serves 6-8
  • 1 1/2 cups Birch Bender's Paleo Pancake mix. You can find them here! )
  • 1/2 cup organic, whole milk ricotta 
  • 1/4 cup water
  • 2 tablespoons lemon juice
  • 2 teaspoons lemon zest
Process:

1. Combine all ingredients in a large mixing bowl and mix well until combined. Mixture should be smooth and thin enough to spread out onto your griddle. Add a little bit more water if necessary. 
2. On a griddle or nonstick pan over medium heat, cook pancakes on each side until golden brown (usually about 2 minutes per side.
3. Serve with pure maple syrup or your favorite blueberry syrup. I also like to add coconut flakes to mine as well.
