Sweet Potato Waffle Buns!

There's still a month left of grilling and Summer fun! Being on a gluten free diet, one thing that I really miss is a hamburger bun during the summer. I promise you, you won't miss a bun with this delicious and simple recipe. You'll need a large sweet potato and a waffle iron for this recipe. It will take you about 30 minutes to prepare. My husband(who's a lover of anything with bread) told me he would give up hamburger buns if he could have this instead. That's how you know that you've done something brilliant.

(paleo, gluten free)
Serves 2

  • 1 large sweet potato, peeled and grated
  • 1 large egg, beaten
  • 1 tablespoon tapioca or arrowroot starch
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon chili powder                     
1. Grate sweet potato and set aside. Turn on waffle iron.
2. Strain sweet potato by wringing out in a towel.(make sure potatoes are very dry)
3. In a small bowl, whisk egg, tapioca and spices and set aside.
4. Combine egg and sweet potato mixture in a medium-large bowl.
5. Add 1/2 cup potato mixture to the waffle iron and cook for about 10-15 minutes until golden brown.
6. Enjoy right away, or freeze the remainder and toast as you need them!
